WE HAD BEEN PLANNING TO spend the holidays in Spain, just as we did last year, beginning with cava & oysters for brunch at the mercado and shopping for beautiful ingredients for Christmas dinner–sprigs of fragrant rosemary, shallots tied with raffia, something decadent for dessert. However, it was not to be, for only five days before Christmas, we found ourselves on a flight to Scotland, despite having just been there a few weeks before. And while things may not have gone completely according to plan, in the end, aren’t the holidays a time for spending with family? And despite leaving the balmy temperatures for freezing ones, the day after Christmas, we awoke to a winter wonderland, which was rather magical. And of course, we found ourselves in very cosy Glaswegian pubs all candlelit and decorated for the holidays, which is always a wonderful thing. And as the year is winding down, we’re a little pensive and somewhat wistful about the year gone by, but also terribly excited about the adventures the new year and this beautiful life will bring…
