IF YOU HAVE BEEN TO LONDON, you will most likely have visited Somerset House, an arts & culture centre in the centre of London. There are fountains in the summertime and skating in the winter, as well as contemporary art and design exhibitions, workshops and guided tours. The venue also hosts London Fashion Week, and as of last November, is also home to Spring Restaurant, the venture by Australian Michelin-starred chef, Skye Gyngell. The star was earned at Petersham Nurseries Cafe, in a grand garden centre setting and serving seasonal produce.
Spring, which seats 120, was designed with the help of interior designer, Briony Fitzgerald, to showcase the 19th-century pillars, crown mouldings and high ceilings, and serves dishes such as Crab with agretti, puntarelle, tardivo and verjuice dressing to start, and Winter rhubarb ice cream with meringue and candied ginger for dessert . . .
